Recipe for ployes
2 cups buckwheat flour
I cup white flour
3 teaspoons baking powder
1 teaspoon salt

Mix all dry ingredients together in a bowl. Make a well in the flour and incorporate 2 cups of cold water, mixing well. Let stand for 5 minutes. Add one cup of boiling water and beat vigorously. If the mixture seems too thick, add a bit of cold water. Transfer to a skillet and cook over medium-low heat. And don’t forget that a ploye must never be flipped during cooking!

For delicious ployes you have to mix the batter in between each ploye.
